Pumpkin Pie for Pi


While the festivities of Halloween at OSIsoft were held yesterday with the 18th Halloween Pumpkin Decorating Contest, the enjoyment of the pumpkin pies I baked Wednesday night waited until today. For after a long couple weeks of travel, our fearless leader returned to the den, to be met with a back-load of work. So today it was decided the week should be concluded with a little Halloween cheer by serving pumpkin pie to pi folks. While I couldn’t partake in the specticle, the reviews afterwards were outstanding. So I will include the simple recipe for reference here.

My favorite pumpkin pie recipe
(It is very simple to make.)
Take one frozen pie out of the freezer and allow it to defrost at room temperature for approximately 10 minutes.
Preheat the oven to 400 degrees F.

Assemble Pumpkin Pie Ingredients:
1 1/2 cups of mashed cooked pumpkin
3/4 cup sugar
1/2 teaspoon salt
1/2 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1 1/4 cups milk
1 6 oz can (2/3) evaporated milk
3 eggs

Simple Instructions:
Blend in blender until smooth. Add 3 eggs.
Blend in eggs. Don’t over beat.
Pour into unbaked pastry shell
Bake in hot oven (400 degrees) 50 minutes or till knife inserted halfway between center and outside edge comes out lean.
