During the virtual Baking Class today, I cooked some delicious savory empanadas! Even Rose was ecstatic. We were given the option to make one or both flavors. The vegetable empanadas agreed with me.
Cooking was tiring. I had to take frequent breaks to sit at the counter on the high stool.
If you have familiarity with the techniques and want to make them, here are the ingredients.
Ingredients
• For the quick puff pastry
o 450g/3 and 5/8 C-all purpose flour
o 5g/1 tsp-salt
o 75g/5 tbsp-unsalted butter #1
o 180g/12 tbsp-unsalted butter #2
o 110-120g/6-7 tbsp-cold water
• For the Moroccan beef filling
o 1 tbsp-olive oil
o 8 oz. ground beef*
o 1 small onion
o small bunch-flat leaf parsley
o 2-garlic cloves
o 2 tsp-cumin
o 1/2 tsp-coriander
o 1/2 tsp-nutmeg
o 1 tsp-tumeric
o 1 tsp-cinnamon powder
o 2-3 tsp-harissa paste
o 2 tsp-cornstarch
o chicken or beef stock (as needed)
o salt and pepper to taste
*85% lean ground beef is best for flavor but not too fatty. You can also do half beef/half turkey if you want to reduce calories but keep flavor
**Please note: The beef recipe requires A LOT of spices;, if you do not want to buy all of them, the MUST HAVES are: cumin, cinnamon powder and harissa.
• For the black bean filling
o 1 tbsp-olive oil
o 1 can (14 oz) black beans
o 1 small can corn
o 1/2 onion
o 1/2 red pepper
o 1/4-1/2 tsp-red pepper flakes (optional)
o 2 tsp-cumin
o 1 tsp-paprika
o 1 garlic clove
o 1 tbsp-tomato paste
o 1/8-1/4 C-water
o 1/2 a lime, juiced
o cilantro (small handful chopped) (Optional)
o salt and pepper to taste
Supplies Needed
• box grater or grater attachment on food processor (butter has to be grated for this quick lamination method)
• food processor (or you can chop finely by hand)
• rolling pin
• baking sheets with parchment paper
• round cookie cutter (3-3.5in)
• pans for cooking meat and/or vegetarian filling
