Even Rose was ecstatic. We were given the option to make one or both flavors. The vegetable empanadas agreed with me.<br \/>\nCooking was tiring.  I had to take frequent breaks to sit at the counter on the high stool.<br \/>\nIf you have familiarity with the techniques and want to make them, here are the ingredients.<\/p>\n<p> Ingredients<br \/>\n\u2022\tFor the quick puff pastry<br \/>\no\t450g\/3 and 5\/8 C-all purpose flour<br \/>\no\t5g\/1 tsp-salt<br \/>\no\t75g\/5 tbsp-unsalted butter #1<br \/>\no\t180g\/12 tbsp-unsalted butter #2<br \/>\no\t110-120g\/6-7 tbsp-cold water<\/p>\n<p>\u2022\tFor the Moroccan beef filling<br \/>\no\t1 tbsp-olive oil<br \/>\no\t8 oz. ground beef*<br \/>\no\t1 small onion<br \/>\no\tsmall bunch-flat leaf parsley<br \/>\no\t2-garlic cloves<br \/>\no\t2 tsp-cumin<br \/>\no\t1\/2 tsp-coriander<br \/>\no\t1\/2 tsp-nutmeg<br \/>\no\t1 tsp-tumeric<br \/>\no\t1 tsp-cinnamon powder<br \/>\no\t2-3 tsp-harissa paste<br \/>\no\t2 tsp-cornstarch<br \/>\no\tchicken or beef stock (as needed)<br \/>\no\tsalt and pepper to taste<br \/>\n*85% lean ground beef is best for flavor but not too fatty.  You can also do half beef\/half turkey if you want to reduce calories but keep flavor<br \/>\n**Please note: The beef recipe requires A LOT of spices;, if you do not want to buy all of them, the MUST HAVES are: cumin, cinnamon powder and harissa.<br \/>\n\u2022\tFor the black bean filling<br \/>\no\t1 tbsp-olive oil<br \/>\no\t1 can (14 oz) black beans<br \/>\no\t1 small can corn<br \/>\no\t1\/2 onion<br \/>\no\t1\/2 red pepper<br \/>\no\t1\/4-1\/2 tsp-red pepper flakes (optional)<br \/>\no\t2 tsp-cumin<br \/>\no\t1 tsp-paprika<br \/>\no\t1 garlic clove<br \/>\no\t1 tbsp-tomato paste<br \/>\no\t1\/8-1\/4 C-water<br \/>\no\t1\/2 a lime, juiced<br \/>\no\tcilantro (small handful chopped) (Optional)<br \/>\no\tsalt and pepper to taste<br \/>\nSupplies Needed<br \/>\n\u2022\tbox grater or grater attachment on food processor (butter has to be grated for this quick lamination method)<br \/>\n\u2022\tfood processor (or you can chop finely by hand)<br \/>\n\u2022\trolling pin<br \/>\n\u2022\tbaking sheets with parchment paper<br \/>\n\u2022\tround cookie cutter (3-3.5in)<br \/>\n\u2022\tpans for cooking meat and\/or vegetarian filling<\/p>\n","protected":false},"excerpt":{"rendered":"<p>During the virtual Baking Class today, I cooked some delicious savory empanadas!
